Ingredients
2 large eggs
2 slices of ham (chopped or torn into bite-sized pieces)
1/2 medium sweet potato (peeled and diced)
1/4 cup cooked quinoa
1/4 cup frozen spinach (no need to thaw)
Salt and pepper, to taste
Salsa (or any topping of your choice)
Directions
Microwave Sweet Potato:
Place the diced sweet potato in a wide mug or small microwave-safe bowl. Add 1 tablespoon of water and cover loosely with a microwave-safe lid or plate.
Microwave for 2–5 minutes, or until the sweet potato is tender when pierced with a fork. Drain any excess water.
Combine Ingredients:
Add the cooked quinoa and frozen spinach to the same bowl. Stir gently to combine.
Cook the Eggs:
Carefully crack 2 eggs over the mixture, ensuring the yolks remain intact.
Sprinkle a small amount of water (about 1 teaspoon) over the eggs to help them cook evenly. Cover the bowl with a microwave-safe lid or plate.
Microwave for 30 seconds to 1 minute, or until the egg whites are set but the yolks remain runny (microwave times may vary).
Add Ham:
Toss the ham into the bowl while the eggs are still hot, allowing it to warm through.
